Punjabi influence, but because it's the capitol people from all over India have come here, so there are other influences from all over the country, which means you can find all different kinds of Indian food here--and yes, there are different kinds of food, because India actually has a lot of different cultures and languages. A lot of the food in India is vegetarian, due to strong local religious influences, but we'll also be trying various meats today, and most of the food will be full of spices, because they're plentifully available in this region--and they happily adopted ones that came from abroad, like the chili pepper--and they make things taste good.
